If you celebrated National Tequila Day and are up to read this today….Happy Fridaaaaaaaaay!!  Tomorrow morning on Daybreak I have a special guest,  Marcos Macias of Cubiertos Mexican Kitchen & Margarita Bar and he will show us how to make the light & delicious shrimp ceviche.  I visited  Marcos earlier this week to decide which recipe to make on air and it was a tough choice!  So of course,  we have a bonus recipe, Mangos al Tequila….which means flambé mangos aka FIRE!!!!!!!  Caramelized mangos and tequila over vanilla ice cream…I’m so there!  If you make either of these recipes, please share it with us on the KVIL Facebook page or tweet us!

Grab your ingredients and I will see you in the morning!!!

Shrimp Ceviche

1cup peeled bay shrimp
1cup diced red onion
1cup diced tomato
1bunch chopped cilantro
1whole avocado
2oz of chopped cappers
2oz of chopped olives
7 limes (juice)
1/2 cup olive oil
Dash of Vinegar, Sea salt,
Black pepper

Step #1 slice the shrimp chop the vegetables

Step#2 mix the shrimp the lemon and seasoned with see salt and fresh crush pepper

Step#3 incorporate the chopped vegetables (but cilantro) with the rest of the ingredients
mix and slowly add olive oil

Step#4 add the chopped cilantro

Step#5 serve on top of a tostada and garnish with slice avocado

BONUS RECIPE: Mangos al tequila

2 whole mangos
1 Vanilla ice cream
1/2 cup sugar
1/2 cup butter
Dash of cinnamon
2oz silver tequila
2oz orange liquor
2oz mango juice

Step#1 pre heat a sauté pan with butter

Step#2 caramelize the sugar

Step#3 add the mangos

Step#4 add tequila

Step#5 add orange liquor

Step#6 add juice and slowly reduce

Step#7 serve over vanilla Ice cream
