The summer is here. It is hot, it is sticky and we’re all trying to fit in our pool bodies until it gets cold again and we can let ourselves go. One thing I love on these hot summer days is a delicious and nutritious salad. This one is super easy but extremely delicious!!!!
Watermelon Feta Salad with Balsamic Glaze
5 oz Package of Baby Arugula
4-8 Cups (to your liking) 3/4 inch cubes of seedless Watermelon
7 oz Package of Crumbled eta Cheese
Balsamic Vinegar Glaze
You can do this one of two ways, personally I like the presentation of the first option, but it’s up to you.
Option 1- Arrange the Baby Arugula over a large serving platter. Spread Watemelon over Arugula and then Feta next. Drizzle with Balsamic Glaze and then a dash of pepper to taste. It’s gorgeous and ready to serve.
Option 2- Do this method only if you are going to eat it immediately. In a large bowl, toss the Arugula, Feta and Balsamic Glaze lightly to mx. Then add the Watermelon and drizzle a little more Balsmic Glaze. Toss gingerly and serve.
NOTE: Balsamic Glaze can be found in most grocery stores on the isle with Balsamic Vinegars. If you can’t find it or want to make your own here is how:
oil 3/4 cup Balsamic Vinegar in a small sauce pan until reduced to 3-4 tablespoons. Stir frequently to avoid scorching. About 6-7 minutes.
